Let the meat rest for 15-20 minutes. In a heavy-bottomed frying pan over high heat, melt the butter in the olive oil. Place the steaks in the pan and cook for 3-4 minutes on each side. Transfer the meat to warmed plates and cover with a piece of foil.<br /><br />While the meat is resting, prepare the sauce. Very finely chop the shallot and fry over medium heat for 2 minutes directly in the pan where the meat was fried. Add the beef broth and reduce the sauce over high heat for 10 minutes.
